Discover our classic fennel salami. Known as salami finocchiona or finocchiona salame, this popular cured meat is defined by the sweet, aromatic notes of fennel seeds. It's an essential addition to any charcuterie board. A traditional salami flavour, made with the highest quality British Middle White pork.

 

The Makers' Inspiration

No self-respecting charcutier can avoid the lure of fennel salami. We had to have one, although we did patiently wait for a year before developing this version that has been with us ever since.

 

How We Make It

Our classic salami base of heritage breed pork and local wine is mixed with just a touch of fennel. This smidge is enough to bring out the sweetness in the heritage breed pork, which develops as the salami is fermented and dried over months.

 

Tasting Notes

Light, fresh and creamy, with a hint of herb and spice from the cure. From eggs benedict to wrapping spears of asparagus, it's excellent in many roles.

 

Founder's Take

"People ask which my favourite charcuterie is. Well, it changes, but our fennel salami is almost always in the top three. I could eat it all day."
